I'll second Billy Preston, Steve Winwood (definitely!) and most of the
others named.

The little fill Preston plays in the Beatles "Let it Be" was probably the
first time a Hammond sent a thrill through me.

What about Thijs van Leer in the Dutch band Focus (also played flute).
Although they were most famous for "Hocus Pocus", I reckon some of their
other stuff is much better. Listen to "Focus II", "Focus III" and "Sylvia"
(ideally on their "Live at the Rainbow" album) for some great, up-front
Hammond (Jan Akkerman's guitar is pretty impressive too).
