Instead of listing the more obvious Hammond legends (Jimmy Smith, et.al.)
here are some guys who caught my ear over the years.

Joachim Jymm Young - Steve Miller Band (amazing Hammond part on "Fly Like an
Eagle", also on Les Dudek's "Say No More"
Rod Argent - Zombies, Argent
Benmont Tench - Tom Petty, everybody else
Art Neville - Neville Bros., the Meters
Jimmy Greenspoon - Three Dog Night
Garth Hudson - the Band
Jerry Corbetta - Sugarloaf

Most of these guys are not so much known for lightning chops as they are
great manipulators of tasteful Leslie, drawbar & percussion control.
