As best as I can tell, the V3 and V5 use a fixed leakage simulator. It can be increased or decreased in real time, and saved on a per-patch basis, but it does not fully track the number of keys pressed, or the number of drawbars in use. As an example, if you set up 88 8000 000 with the "correct" amount of leakage (to your ears), hold a C chord, then change the drawbar settings to 80 8000 000, the leakage will stay the same.

The CX-3 and VK-7 appear to use more complex waveform models, which allow for gradual increase in leakage as more keys or drawbars are used. I have not experimented with the VK7 in this area, but I did spend about 1/2 hour with the CX-3, and this seemed to be the case. In addition, the CX-3 provides different amounts of leakage in different octaves, which adds to the authentic sound.

This is all done from my outside perception. Would Dave A. or Jerry K. care to comment on their companys' respective products?
